No one that works at a Taco Bell knows exactly what is in the meat. I used to be a store manager for Taco Bell and everything comes in pre-made in packages. If an employee tells you they know what it’s made of, they are lying. No one in the field has any idea. I’m not saying it’s 100% meat, and I’m not saying it’s full of crap. I’m just saying no employee in a restaurant has any idea what’s in it.
I worked for taco bell about 40 or so yrs ago back then we literally did everything by hand in store. We fried the ground beef and it was 100% ground beef, we shredded all the lettuce we shredded all the blocks of cheese we diced tomatoes we fried all the shells (hated being on fryer grease was awful) oh and we got dried beans soaked them for hrs then cooked them in a pressure cooker for hrs to make the refried beans. Everything done in store every day. Man they sure have it easy now where everything comes already done. That’s a real shame cause back in the day it was truly made fresh every day.

When a good local Mexican taco shack or restaurant or one of the better chains wants $10 for a fajita (beef or chicken) burrito and $3-$4 for a “basic” taco, while Taco Bell undercuts them, you can bet Taco Bell is not playing with real meant most of the time. Honestly, there are so many cooking websites that have made most of Taco Bell’s menu their own way, you would be better off eating as they cook.
Fat is not bad for you unless it is trans fats. Sugar and Carbohydrates are far worse for you than fat content. I have been on Keto and I’m much healthier getting sugar and carbs out of my diet. Vegetable Oil is also terrible for you, believe it or not lard and butter is a lot better than vegetable oil.

I used to work for taco bell back in the late 1980’s . And back then everything was made in house. The meat was real hamburger and you added spices and cooked it on our stove and drained the meat. Also the beans started out as whole beans and we would put it in a pot with a block of lard put the lid on it and cook it for 2+ hours. Then mix the beans until creamy. The food tasted better back then. Now just so so.
If she’s not a corporate employee or a trained FDA agent, she doesn’t know anything about the food other than how to put it together. Let’s also understand that nobody is going to taco bell expecting top grade meats. All this “pink slime” and “what’s left after the good cuts are taken” is all BS. Food is food; as long as it’s not contaminated, it’s fine as processed food.
Sodium does not raise blood pressure. It’s the carbs/sugar that raise insulin and in turn, blood pressure. Sodium is necessary and if you eat too much sodium, eat more potassium to balance it out. Another lie, saturated fat. It’s not bad for you unless you’re mixing it with sugar/carbs. Eating a lot of saturated fat is necessary as we are made from saturated fat. But eat saturated fat as part of a keto diet.
It’s known in the restaurant community that you can cut back and make something so cheap that people will stop buying it. This happened to me at Taco Bell ten years ago. Without going into the details you can decide for yourself the next time you buy a hard shell taco at TB. Order the taco, open it up at the counter, and then compare it to the image on the menu board. The quality of what you paid for and the quality of what you got will be two different things. Compare the volume of meat filling to that of the menu board image. If you think that “bait and switch” is acceptable keep eating there. I quit ten years ago because the kid behind the counter replied to my query: “That’s how we make ’em.” All I want is value shown. Using the shell as the reference, if you can barely see the filling yet see a half inch or more on the menu means the value isn’t there. Good riddance Taco Bell! Asta la vista.
Well, it’s really a moot point anyway since nowadays Taco Bell puts so little meat in any of their menu items and the fact that their food is so way overpriced! I have suspected the meat was garbage for years and remember a news item over a decade ago that said they were using fake meat – especially the beef. When I eat there, I always leave feeling empty and hungry. And I’m usually ticked off at myself for spending that much money for garbage after caving into my adolescent memory trip cravings from a better time when Taco Bell was about quality and value in another world that has long since passed from the scene when it wasn’t so expensive, and the portions were great just like the quality of their meat and other ingredients. I went to TB about two days ago and it was crap! I aint going back. I’m done with them! They had their hey-day but that was many moons ago and now they’re just another corporate entity. At least there is still IN-N-OUT and they haven’t compromised their quality. Compared to Taco Bell, their food is a great value for the money. Plus, I don’t leave there, starving to death and mad at myself for not just flushing the money down the john instead of handing it over to nameless, faceless, corporate suits who marginalize their customers just like they have their food. IN-N-OUT is an institution! Taco Bell is just a brand with secret spices and company logos that identify their food. Just like KFC but like the Colonel, who is long gone, and they have a stand-in imposter who is as fake as their food which is packaged with their trademark brand name stamped on everything, but it is really just junk food that isn’t as nutritious as cardboard sprinkled with their secret spices just enough to entice the unwary.
I actually liked the shredded chicken items. I thought their steak burrito was pretty good too. I don’t go there much anymore not because I don’t like them but because since covid, they close too early. I work 2nd shift and they used to be open until midnight or later, now they close much earlier. I hate that my local Walmart still closes at 11 pm instead of being open 24 hours. I loved going in there late at night after work and having very few other people in there.
They use the lowest quality meat that the USDA will approve of. If you can get a taco for one buck, or any fast food for that matter, I’d be a bit skeptical. I avoid fast food at all costs, it’s not in any way good for your health, it makes me feel sick, I don’t like the taste of it either. The word “fast” gives away that something will be off about it. I know people like it for the convenience, but I’d say avoid it unless it’s absolutely necessary to eat it.
Taco Bell used to use fresh ground beef and spice mixture and was cooked fresh in the store. They also used to cook the pinto beans fresh in the store in giant pressure cookers then whipped the beans with a drill. Of course they also cooked with lard which made them delicious. Sadly, Taco Bell quality succumbed to the almighty dollar and now both the meat and beans come in bags. Dairy Queen tacos are way better if you can get them.

Here is an idea…Go to the grocery store and get beef, cheese, lettuce & shells and make them yourself. In this vulture economy, businesses believe they are hard-pressed to maintain a standard of high-quality food. Personally, I prefer to prepare my own food because many of these restaurants are untrustworthy. I am old enough to remember when serving high quality food was a given. I find it spectacular that these business models assume that they can serve any old kind of mess and stay in business.

Taco Bell was fake from the get go. Consider the founder Glen Bell, a nice Mexican name. Most Mexican restaurants in America likewise haven’t got enough authenticity to be properly called Mexican. One problem all of them have is Mexico itself is a micro food climate which means every place has its own way of making dishes. The special ingredients for many of these foods aren’t prepared by Goya and aren’t available in the United States either. Most of the Mexican restaurants in America refuse to do what level they could do for authentic Mexican since they’d loose too many of their gringo customers. Same deal with Chinese. Most of the stuff on Chinese Restaurant menus in the United States Chinese in China not only have never eaten they’d throw in the trash. Much of what is in China in terms of cuisine hasn’t made it to America yet and I don’t expect that to change in my lifetme.
I feel like compromises like these are not only bound to happen, but inevitable. Think about how many restaurants are around the world. All the markets and all the people around the world. Food is something we use as celebration now and is easily accessible to most people. Most of us even use it as a way to kill boredom or to deal with stress. In order to meet the needs of all the people, markets and restaurants, fillers and unwanted pieces of meat are going to be used. It’s gonna be impossible to meet the needs of all these sources and still use all these prime cuts, grass fed and top tier selections. And half of that stuff is going to get thrown away anyway.

I worked for the company that made Taco Bell taco meat(beef) it contains textured vegetable protein, meat, and spices, steamed in a large cooking vessel with multiple spinning blades to cut it all to the right texture and then packed in a chub pack like sausage comes in, then refrigerated and shipped to Taco Bell to be re-heated and put in tacos with lettuce and cheese. It was said at one time an employee dissappeared during the shift, it was said that later someone looked into the cooking vessel and noticed red threads in the cooked taco meat, that looked suprisingly like the color of the flannel shirt he was wearing when he turned up missing.
After when George H Bush said “We are in a New World Order” in the Early 1990’s and after 9-11 was the beginning of the end. I had a friend who worked at taco bell. One time I was at his house and he said “watch this…” so he tossed a grocery store bought piece of steak to his dog; the dog ate it promptly. Then he tossed some taco bell steak and chicken that he had brought home from work….the dog sniffed it and turned around to walk away. He said “yeah, I just work there. I don’t eat the crap they sell, and neither should you.” This was in the late 90’s. I never went to another Taco Bell again.

Oh stop it!! McDonald’s don’t use pink slime! I worked at McDonald’s for over 5 years and everything is good quality foods for a fast food joint. Yeah they’re prepackaged but there’s nothing weird or suspicious about them. The ingredients are all on the packages, They use 100% beef, the chicken comes frozen but it’s good chicken. They don’t do anything weird to the foods. I worked in the grill and I made sandwiches. Did food prep. Worked the drive thru, worked every single shift, etc. Nothing weird or unnatural. Tbh, as someone who works at Taco Bell like myself (I’m just a crew member who makes the food), I actually like the steak from Taco Bell, they’re mostly well done just the way I like it, but I never get chicken or beef from there. Every time when I make food for myself, either on break or when my shift is over, I usually get steak for my tacos or burritos or quesadillas instead of chicken and beef.
Taco Bell is now so disgusting I would not eat it even if it was free and they delivered it hot to my door. They changed their beef recipe back in about 2016. It is so utterly disgusting it’s unbelievable. I tried three different locations in three different cities over 6 month period and they were all the same. I will never eat at Taco Bell again. The steak is low grade flank steak. It ain’t ribeye, but it’s steak. If you eat out anywhere, you are going to get alot of sodium. And the vegitarian options actually have MORE sodium than the meat. This article contradicts itself. The KFC rat scandal was debunked…it was just a chicken tender that happened to be shaped like a rat. Probably a cook being silly. And if their collectomatic pressure fryers are not properly maintained, or if an element goes out, it is possible to get undercooked chicken. They are supposed to temp one piece out of every cage that comes up…but when you have a 40 car line of angry customers….that is not always possible. I don’t care what taco bell says. If I eat 5 products that claim to have ground beef and I am not full, they cannot have that much beef in them. The last time I went there I spent $17 and I was not full. I even told them to put double meat on each item. That was over a year ago and I haven’t been back. I remember a few years ago I started getting sick from Taco Bell and would throw up anytime I would eat it. I heard from someone that worked there that the reason for that is because they were using rotten meat. I used to eat taco bell a lot and never got sick like that before but after that I was afraid to eat it anymore. But I do miss it a lot.
Personally, I don’t care in the slightest. I’ve been hearing about this kind of thing for decades and it hasn’t discouraged me from going to those places. I know good and well what’s in hotdogs, and it hasn’t stopped me from eating those either. Hell, I love souse and head cheese whenever I find it and those are literally loaves of all the scrap parts of cows and pigs. Lips, tongues, probably buttholes, and all sorts of good stuff. It’s delicious. I have no qualms with eating other animals we usually don’t consider food either, including horses.

Beef is okay she’s right, but steak and chicken regardless what it’s made of is cooked in a different process from beef. It can sometimes get the dishwasher food steamer water in the bag while it’s cooking and it will cook in this murky oily water. My first job as a kid in 93′ was at Wendy’s.. it was also rumored that they also served “horse meat.. all I know is that, I noticed anytime any of us employees would eat at lunch everyone complained an hour later either of feeling sick or having a stomach ache. I literally only eat salad there after all these years.
You need a certain amount of calories to feel full. If something only had say 200 calories instead of 700, you’d have to eat like 4 or 5 of them to fill up. 2500 calories per day, while considered some sort of standard, is a pretty low amount for active people. 4000 is more like what I consume a day and I’ve been basically the same weight for 20 years. At 2500 a day, I would be constantly hungry.
I worked as a food thech dietitian for a food company many moons ago. I took on a second job working at a taco bell. as I was putting the cold stuff away one night I just took some time to look, and read the end of one case of ground meat ingredient’s of wat was in that ground beef. first the entire end of case box was the lable of it contents. I could not pre ounce most of that discussing crap. you would need a big biological dictionary on that crap. OMG….
I had a friend back in the early 80s, maybe even just 1980, who worked at Taco Bell and told me about the meat. Back then they would take actual ground beef and cook it in a huge pot and just keep mixing and breaking it up. After all of the ground beef was cooked through they added a lot of water and then a big bag of some kind of mystery powder. They kept cooking the mix and stirring it until everything was uniform texture. I think I remember that he said the powder was white but turned brown during the mixing. He called it blow-up meat since it was cut so bad with the powder. I guess nowadays they have their “meat” pre-packaged and pre-mixed already before it’s reheated in their kitchens so that none of the employees actually see or know what goes into it. Taco Bell has never served 100% beef to my knowledge. The FDA knows about it too and they set a minimum standard that Taco Bell failed to meet around 20 years ago. All the FDA required them to do was to insure that their “beef” was at least 40% real. Taco Bell failed to do even that. They say you can’t un-ring a Bell. I can at least not spend any money there.
I once still in line to taco Bell and I was perusal them in the back. someone reached down and opened up a cabinet and pulled out a big plastic bag full of brown liquid. They cut it open and it poured like soup or vomit into the container and stir It up and I asked a person what is that and she said that’s the beef that they put in tacos. True story.
Better help sucks. The “therapists”where unprofessional and predatory. When I refused certain things because they made things worse for me they threw temper tantrums and told me to stop making excuses and do it. When I still refused and said again why they dropped me leaving me without a therapist for months at a time and forcing me to start over with someone new which was extremely stressful. After this happening SIX times in one year I gave up on better help.
On the thin cream tip: if it’s too thin it generally means that the oil was added too quickly. Start over with new aquafaba and, dribble in the loose one, while slowly blending, to thicken it. Also, add about a T of whole chickpeas in when you blend the aquafaba. They help a lot with thickening. Thanks for your content! It’s helped with my transition to plant-based.
Your ideas for chickpeas are honestly endless, I am always so impressed! It is really SUCH a versatile legume you could make not only wonderful dishes highlighting them as an ingredient but also use them as a basis for so so many other ideas – from cheese and mayo, through “meat” up to desserts. I love how these tacos turned out and I definitely feel inspired to make some at home!
I make a thick vegan yogurt that I use as sour cream. It thickens and sours on its own. I use 1/4 cup of my previous batch of yogurt (or use store bought), one container of silken tofu, half a cup of raw cashews, and one cup of water. I blend it up, and put it into two mason jars with the lids on loosely. Then I let it sit them my microwave for a few hours, until it thickens and sours to my liking.
I bet you could make the sour cream thicker without any thickeners if you changed the process. Same ingredients but make it with the process like an aquafaba mayo–Minimalist Baker has a good recipe–basically slowly emulsifying the oil into the unblended aquafaba until thick, then mixing in the other ingredients. I think the critical flaw was either whipping up the aquafaba prematurely or trying to blend in solid oil.

This is worthy of a article. Cook that exact taco meat recipe for the taco meat, then use Jack Fruit and make in a separate pan what is like BBQ pulled Chicken. Then mix the two together after cooking them separately. When you make your BBQ Sandwich, add your two favorite BBQ sauces, Dill Relish and cheese. I suggest slightly toasting the buns on a frying pan. Best BBQ sandwich that is vegan you will ever have. I use Heinze Dill Relish in the squeeze bottle as it is lower in sodium. 75mg of sodium compared to 150 to 200mg of the other type of dill relishes on the shelf. Something about cooking them separate and then mixing them and simmer for just 3 or 5 minutes mixed. Back when I was eating a lot of meat, I would make ground beef like Taco meat and in a separate pan make pulled BBQ chicken and then mix them, simmer just a few minutes and then make BBQ sandwiches on toasted buns. I called it Adulterated BBQ Sandwiches, but at the family reunion I called it 50/50 BBQ, as I used two different meats. Good luck with future YouTube endeavors and if I could offer two pieces of advice I would say don’t worry so much about replying to comments, I can’t imagine it’s very good for your mental health (oh the irony coming from the person who just spent the last hour replying to countless YouTube comments on this very article) and do worry a little bit more about the people you accept sponsorships from. While I do believe you when you say you’ve had a great experience with BH you also are clearly ignoring the numerous comments on your article from other users who have had bad experiences and not to mention the thousands of other users who have voiced complaints online beyond your community. Just made this recipe and it was delicious! For the sour cream I added 1 tbsp of cornstarch and brought it to a boil for one minute, then chilled it overnight in the fridge. If came out nearly the consistency of sour cream. I also used Hatch taco sauce vs Taco Bell, which is an upgrade. Thanks for your great articles!
I know this will get buried and the YT employees will make certain of that but anyway. King oyster mushrooms. Ive used them to make some of the best chorizo ive ever had. Its damn near impossible to tell the difference when done correctly. You can use them to do pretty much anything as far as meat replacement goes.
Here’s a tip for a garlic sauce: soak 1 cup of cashews in hot water for 30 minutes. Then rinse them. Blend the cashews with 1-2 garlic cloves, 1/3 teaspoon of salt, 1-2 teaspoons of lemon juice with half a cup of water. That will make a very thick sauce. If it’s too thick, add some more water, a little at a time and blend until you get the consistency you like. Store in an air-tight glass jar in the fridge. It lasts for like 4-5 days. You can replace the garlic with other spices and herbs too of course.
The taco looks amazing. I love your website and innovative recipes and it’s okay to show mistakes because we’re flawed humans… But something really bothered me toward the end of this article. I felt a lot of empathy for the chef here. The man spent so much time and effort to make the perfect vegan taco and took 2 days and at some level there must be a part of him that seeks the approval and validation from his wife who is not giving him that love or approval he is looking for. I can see his frustration towards the end when he made the comment about viewers asking for recipes that his wife disliked. What is emotionally driving him to make all these wonderful recipes? Is it to impress us the youtube audience? We are already super impressed! But he has a wife who looks like she will never be impressed. She only ate the top parts and left most of the filling. In fact she insulted him by putting back the half eaten taco! Oh no!! She might as well have thrown it straight in the garbage. How can you do that to someone who has made this food with so much love? Her expressions looked so awkward and insincere like she was being forced to eat something awful and saying “mm!” half heartedly. Maybe it will only fuel him to try even harder next time to please her- a vicious cycle of emotional rejection (perhaps a mother/parental figure had this same pattern in his childhood). Maybe I’m projecting! This article reminds me of another vegan youtube website called vegan refined where the vegan wife tries so hard to impress her meat eating husband and he’s like “meh whatever… it’s okay.
Ive been pretty well turned off to chick peas after making my friend hummus once (he said his Saudi grandmother would have loved me jf she was still alive, so I guess it was good 😂) cause the smell of the cooked peas was kinda gross, and the tahini was even worse 😂 (which I know isnt relevant to this article but the memories are associated) Might give this a shot though 🤔 my friend is helping me lose weight and suggested chickpea flour pasta

First and foremost – I love your website. Having said that – I have to say my eye always twitches when I see “Americanized” tacos portrayed as Tacos. I am born and raised in Mexico and our cuisine is my passion. They are Mexican inspired, sure-nothing wrong with that, but please don’t call those tacos. The flour tortilla, cheese, sour cream, tomato, lettuce – none of it goes in a classic taco. Our cuisine has been heavily distorted in the US. Even tourist places in Mexico are including this type of “food” in our own country to cater to tourists. Rant over. On another topic – I strongly recommend you check out Chef TJ on Youtube and his version of Mozzarella vegan cheese. It shows an insane cheese pull- nothing I’ve ever seen any commercial or non-commercial vegan corporation or person accomplish.
I’ve watched several of your articles and enjoy your cooking ideas and format. My comment is for a pattern I’m seeing. If you have a screw up like runny cream or over blending the meat, you should redo it and edit-in the bad outcomes to warn us and talk about it. Not just take 3 minutes to slap some text on the article saying “stop here.” That comes off as you don’t care to take the time to do it right for your viewers. Other websites do. Please take the time to show us the correct result or we won’t know if your recipe is worth our time.
